“Our Sweet Potato Phad Thai provides a healthy take on the popular Thai dish that is enjoyed throughout all regions of Thailand and beyond,” says Chef Rainer Roersch, director of food & beverage and cuisine at Banyan Tree Samui. “Instead of using the traditional rice noodles and prawns, we have replaced these with julienned sweet potatoes and red cabbage served with diced tofu. The usual accompaniments of chives, bean sprouts, shallots, peanuts, chili flakes and more create a delicious, gluten-free and vegan dish that is rich in fiber, vitamins and minerals.”

Sweet Potato Phad Thai
- 1 cup sweet potato, julienned
- ½ cup red cabbage, julienned
- 7 oz. firm tofu, diced and pan-fried
- ¼ cup phad Thai sauce
- ¼ cup peanuts, chopped
- 1 bunch chives, sliced
- 2 cloves shallot, sliced
- ½ cup bean sprouts
- 2 tsp. chili flakes
- 1 lime, wedged
Combine sweet potato, red cabbage and tofu in a large bowl. Add phad Thai sauce and mix thoroughly until ingredients are coated. Serve on plate and garnish with peanuts, chives, shallot, bean sprouts, chili flakes and lime.
