Grab a dose of probiotics and vitamin C with this fermented dish from Costa Rican eco-lodge Hotel Belmar, known for its farm-to-table gastronomy!
Ingredients
- 10 radishes, thinly sliced
- 1 Tbsp. sea salt
- 1 Tbsp. curry powder
- 1 garlic clove, minced
- 1 oz. ginger, grated
- 2 cups filtered water

Directions
Place radishes and sea salt in a bowl. With very clean hands, massage until radishes release some liquid. Mix in curry powder, garlic and grated ginger. Place into a clean, sterilized jar and press them down firmly. Pour filtered water over the prepped radishes until they are completely submerged.
Cover the jar with a lid and leave at room temperature (65°F-75°F) for 5-7 days. Check daily to ensure radishes remain covered in water (brine) and release any built-up gases.
Taste after 5 days. For a stronger flavor, let them ferment a day or two longer.
Once ready, store in the refrigerator. Ensure that the radishes are covered in their own brine at all times, and manipulate only with clean utensils. Ferment should last at least a couple of weeks.
