This delicious dish by Grace O, creator of FoodTrients, is rich in inflammation-fighting omegas and antioxidant lycopene—the perfect topping or dip for summer get-togethers!
- ½ cup olive oil
- ½ cup coarsely chopped pecans
- ½ cup minced sundried tomatoes
- 2-3 Tbsp. sliced black olives
- 2 Tbsp. minced cilantro leaves
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. minced roasted garlic
- 1 Tbsp. low-sodium soy sauce or tamari sauce
Mix all the ingredients in a glass bowl and serve. Yields 1½ cups.
