Tucson’s Miraval Resort & Spa is renowned for its focus on health and wellness, so at first glance cookies might seem out of place on its menu. But these treats, concocted by executive pastry chef Kim Macy, are brimming with goodness as well as sweetness. “Guests love my Trail Mix Cookies because they provide the sweet and salty flavors they crave, but they’re healthful enough not to undo all the good they just did at yoga class,” she says.

Macy, who steers Miraval’s kitchen with her husband, executive chef Justin Macy, breaks down the ingredients: “Featuring whole grains from the oats, unsaturated fats from the seeds and nuts, vitamins and antioxidants from the fruit, and loads of fiber, the cookies can be enjoyed on a hiking trail for a burst of energy or dunked in a glass of cold milk as a yummy snack. I never hesitate to give them to our daughter!”

Trail Mix Cookies

4 Tbsp. butter, softened
½ cup light or dark brown sugar
¼ cup raw cane sugar
½ cup honey or agave nectar
2 egg whites
1 cup all-purpose flour
½ tsp. baking soda
¼ tsp. kosher salt
2 cups rolled oats
½ cup mixed seeds and/or nuts (pumpkin, sunflower, etc.)
½ cup mixed dried fruit (cranberries, cherries, blueberries, etc.)
¼ cup mini semisweet chocolate chips

Preheat oven to 350 degrees F. In a stand mixer, cream butter and sugars together until smooth. Add honey and egg whites, scrape down sides of bowl, and mix for another minute. In a separate bowl, whisk together flour, baking soda and salt. Add this mixture and oats to ingredients in the mixer and continue mixing until just combined. Add seeds, dried fruit and chocolate chips. Drop 1 Tbsp. portions, an inch apart, onto a parchment-lined baking sheet. Bake until cookies are lightly browned and release easily from parchment (8-10 minutes). Cool on a wire rack.
